This is the recipe for classic Genoese pesto. Its based on green basil with the addition of aromatic olive oil, pine nuts, Parmigiano-Reggiano cheese and garlic.

Pesto goes well with pasta, fish and meat dishes, great for dressing salads. Personally for me its aroma is absolutely mouthwatering and causes the desire to take a biggest spoon and eat this sauce as is, without any additions.

Recipe:

Dice garlic. Put into a food processor with other ingredients exept salt and olive oil.

Start pulsing and gradually add olive oil. Allow it to emulsify with the rest of the ingredients.

Season with salt by taste and serve.

You can store pesto in an airtight container in the fridge for up to 5 days.
