This recipe makes the muffins quite crumbly, but at the same time moist from the apples. The amount of batter is not for 12 muffins, but for about 16 muffins. Keep this in mind when pouring the batter into the muffin tins - it's better to make two batches.

You can use kefir or yogurt instead of buttermilk to make the muffin batter.

Dice the apples and coarsly chop the nuts.

In a large bowl, mix the dry ingredients - flour, sugar, salt baking soda and baking powder. In a smaller bowl, add the beaten egg, buttermilk, vegetable oil and vanilla extract.

Combine the two bowls and mix until smooth.

Add the apples and nuts to the batter and mix again.

Pour the batter into the muffin tins, filling them 2/3 full. Sprinkle with sugar and cinnamon mixture.

Bake in a preheated oven at 180 °C for 20 minutes. When done, a toothpick should come out almost dry in the muffins.

Let the muffins cool on a rack.
