Ingredients for 6 portions:

Recipe:
Cut pork belly into medium size pieces. Peel the ginger and chop it finely. Cut pepers lenghwise.
On a medium heat preheat wok with vegetable oil. Add sugar.
Melt to get caramel.
Add pork.
Increase heat to maximum and cook, stirring constantly, until the pieces of belly will get a golden brown crust.
Add ginger, star anise, cinnamon and chili peppers.
Add soy sauce and water.
Bring to a boil and cook on a minimal heat until tender, about 30 minutes.
Remove cooked belly from the wok, increase the hit to medium high and cook until sauce reduces twice.
Serve with rice and fresh vegetables.
