Source: https://tanyachef.com/recipe/indian-style-tomato-rice/Rinse rice three times in cold water, leave to soak for half an hour.
Cut the onions into strips or half rings. Dice the tomatoes. Grind ginger and garlic into a paste (or just chop them as finely as possible).
Heat 3 tablespoons of vegetable oil or ghee in a frying pan over medium heat. Add all the spices and fry for 1 minute, stirring, until the flavor intensifies.
Add the onion and cook, stirring, until translucent, about 4-5 minutes.
Add tomatoes, garlic-ginger paste, garam masala, chili flakes and turmeric.
Stir and cook until the tomatoes are soft and the mixture looks like this:
Drain the rice in a colander. Place the rice in the pan.
Stir and add the water. Add salt.
Bring to a boil, cover and reduce heat to low. Cook until the rice absorbs all the liquid and is completely cooked. Keep an eye on the rice and add more water if necessary.
When rice is cooked, stir in herbs and nuts with a fork and serve. Drizzle with lemon juice if you like.
