Discovery of the day - pineapple paprika glaze for baked chicken wings. It's delicious! It's a little fancy. Well, how fancy - it's just a little more complicated than just marinating the wings and putting them in the oven.

You could make this glaze and take it to a barbecue. And put it on the barbecued wings. I think I'm going to do that next time.

Recipe:

Place the wings in a bowl. Add vegetable oil, cumin, coriander, 1/2 teaspoon paprika and salt. Stir to combine.

Let marinate for 30-40 minutes, then place on a baking sheet and bake in a preheated oven at 200 °C (390°F) for about 35-40 minutes until almost done.

While the wings are baking, in a saucepan, mix pineapple juice, sugar, vinegar, 1 tablespoon of paprika, squeeze juice from half a lime, grate garlic.

Place on stove and cook over medium heat until reduced by half.

Remove the wings from the oven and place in a bowl. Add glaze.

Stir and return the wings to the baking sheet.

Return the tray to the oven and bake for 5 minutes.

Serve.
