Source: https://tanyachef.com/recipe/pork-pepperonata/Cut onion into strips or half rings. Cut meat into bite-sized pieces. Finely chop the garlic. Slice bell pepper not too thin.
Heat 2 tablespoons of vegetable oil in a heavy-bottomed skillet or saucepan over high heat. Brown the meat in batches, about 2 minutes at a time.
Transfer to a plate.
Add the onions to the pan in which the pork was browned and cook, stirring, over medium heat for about 5 minutes.
Add the peppers, herbs and garlic and cook, stirring, for another 5 minutes.
Add the crushed tomatoes with the juice.
Add the meat and season to taste with salt, sugar and ground black pepper.
Bring to a boil, reduce heat to low, and simmer covered until meat is tender, about 35 minutes, or longer if necessary.
Serve.
