Fall is a great time to take full advantage of the pumpkin. I use it just about everywhere - in soups, main dishes, side dishes, baked goods, desserts, salads. And it's good everywhere. And everywhere it shows its different sides.

Today, I propose to make a delicious rice pilaf with pumpkin. It can be eaten without any added protein - it is so good and self-sufficient. But it is also wonderful as a side dish, for example with chicken.

I prefer to use basmati rice in such side dishes - it has an interesting flavor of its own and a good texture.

Recipe:

Cook the rice in salted water until done.

While the rice is cooking, prepare the vegetables. Cut the pumpkin into 1.5 cm cubes. Coarsely chop the onion and finely chop the garlic.

Heat 2 tablespoons of vegetable oil in a frying pan over medium heat. Add the onion and pumpkin and cook, stirring, until the pumpkin is soft, about 7-12 minutes (the exact time will vary depending on the type of pumpkin, so keep an eye on it throughout the process).

Add the garlic one minute before the end of the cooking time.

Leave the pilaf to stand for 5 minutes without a lid. Then loosen it with a fork and put it in a bowl. Add the pumpkin, onion and chopped basil.

Stir and serve.
