Pill shrimps.
Devine: cut shrimps back towards the tail and remove a vein.
On a medium high heat preheat the pan, add 1 tbsp of vegetable oil. Add shrimps and fry for a couple minutes per side. Add salt.
Discard all fat and add sweet chili sauce. Mix and cook for 30 seconds, remove from skillet.
Blanch broccoli in salted boiling water for 4-5 minutes (if using frozen, defrost it before cooking). Strain.
On a high heat preheat the pan, add 1 tbsp of vegetable oil. Add broccoli and fry for a couple minutes.
Cut tomatoes for 2-4 parts depending on size.
Dice the cheese.
Tear the salad with hands and mix with 2/3 of dressing. Put on plates. Add all other ingredients and the rest of dressing.
Serve.
