If you've been looking for a new, non-trivial recipe for stuffed zucchini, here it is. I suggest you to prepare a very tasty dish with Asian notes, which gives teriyaki sauce. I remind you that I've already published the recipe for a homemade variation of this sauce.

You can use the same recipe to make stuffed eggplant instead of zucchini - the procedure and baking time will be the same.

Recipe:

Cut the zucchini in half.

Using a spoon or baller spoon, scoop out the flesh from each half to form a boat.

Place the zucchini in a baking dish. Brush with teriyaki sauce.

Finely chop half of the zucchini flesh.

For the stuffing, combine the ground meat, finely chopped garlic, chili pepper and green onion, pour in the teriyaki and add the zucchini pulp. Add salt to taste (remember there is already salt in the teriyaki).

Stir the stuffing and stuff into the zucchini.

Bake in a preheated oven at 200 °C for about 30 minutes. About 5 minutes before it is done, brush the ground meat with another serving of teriyaki sauce.

Serve.
