Place the bacon and fry until crispy, about 5 minutes.
Remove from pan, let cool slightly and chop finely. Combine the mustard, honey, oil and vinegar in a glass and season with salt to taste. Process with an immersion blender until emulsified.
Add bacon and finely chopped onion.
Stir.
Cut the avocado in half, remove the pit and peel the skin. Cut the flesh into cubes, put in a bowl and pour a small amount of lemon juice so that it does not darken.
Dice the cucumber and mozzarella as well.
Cut the tomatoes into halves or quarters depending on size.
Put the chopped vegetables and cheese in a salad bowl.
Add dressing, mix and serve.
