Recipe:
Make the sauce.
Finely grate the garlic and place in a bowl with all the ingredients.
Mix well.
Refrigerate while cooking the squid.
Cut the squid into rings or strips. Place them in a bowl.
Add the lightly beaten eggs, salt and cornstarch.
Stir together.
Place a deep pan over medium heat and add oil.
There should be enough oil to allow the squid to float while frying.
Place the calamari in batches in the oil and fry until golden, literally a few minutes at a time.
Transfer cooked calamari to paper towels to absorb excess fat.
Serve with the sauce.
