I am absolutely in love with this delicious Mexican appetizer dip. You can eat it as a complete appetizer with tortilla chips, you can serve it with steak, fried chicken, and even with your morning scrambled eggs. And if you mix it with cooked rice, it makes a great side dish.

Making guacamole is very easy and quick because it does not require any heat treatment.

In this variation of guacamole I suggest adding tomato and sweet canned corn to the avocado. You can also add roasted fresh corn from the cob. The heat is your choice. I add a small amount of finely chopped chili so that the sauce only warms up a little. You can make it really hot or really mild - it is your choice.

Recipe:

Halve the avocado, remove the pit and peel off the skin. Put the flesh in a bowl and mash with a fork into a coarse puree.

Add lemon juice and a little salt and stir.

Finely chop the chili, onion and cilantro. Chop the tomatoes into small pieces. Put everything in a bowl with the avocado, add the corn.

Stir and taste, add more salt if desired.

Serve.
