Today I gonna fill in some gaps in gluten-free recipes - i figured out that some of my subscribers have a real need for it. Lets bake a delicious cornmeal bread - with smoked chicken, bellpeppers and cheese. This cornbread is savoury. So it will be a good addition to any soup, stew or chili.

For this recipe fine cornflour is required. Coarse flour like polenta will make the cake crumble.

Recipe:

Preheat the oven to 180℃.

Prepare the filling. Finely chop spring onion, dice the pepper, coarsly grate the cheese. Finely chop the chicken. Chop yellow onion.

Preheat 1 tbsp. vegetable oil in a pan over medium-high heat. Add the onion and pepper and cook, stirring, for 2-3 minutes, until the onion is translucent. Transfer to a bowl with the rest of the ingredients.

Make the batter. Blend eggs, butter, buttermilk, sugar and salt until smooth.

Add flour, baking powder and soda and stir again.

Add the filling.

Mix.

Pour the batter into a greased baking pan. Bake for about 40 minutes.

Serve warm or completely chilled.
