Rack of lamb is quite easy to cook. The main thing in to not overcook it. And use right spices, of cource :) A little bit of cooking magic - and here you are - enjoying tender juicy lamb meat.

The proportion in this recipe is for 2-3 portions. If your family is big or you are cooking for guests - you may double the ingredients.

Recipe:

Preheat oven to 200C.

Season rack with salt and pepper. Cover the ends of the bones with foil to prevent charring.

In a skillet on a high heat preheat 1 tbsp oof vegetable oil. Quicly fry the rack until golden brown on all sides.

Put the rack into a baking dish and bake in the oven. Roast the lamb in preheated oven for 15 to 20 minutes, depending on the degree of doneness you want.

Prepare green breading. Blanch greens in boiling salted water with 1 tbsp of vegetable oil for 15 seconds. Remove from pot and put on paper towels to soak excess moisture.

Remove leaves from stalks and put into food processor together with minced garlic, lemon zest and almonds. Process to get fine crumbs. It must be wet but loose.

Let the lamb rest for 5 minutes, then bread in crumbs lightly pressing breading to rack.

Serve immediately.
